How do I create a sub caption like Figure 1a in MS Word and link it to the
List of Figures?

Such captions must be created manually in Word, for example by adding and/or
modifying field codes. But note that the table of figures may not correctly
pick up such field codes. To work around that, you may want to create the
table of figures based on a particular paragraph style (that you apply to
the relevant captions) instead of on a caption label.
