How to extract information from outlook e-mail to access database

I need to take information from an e-mail that was sent via a website using
cgi-email. The information fields are well defined, with the data encased in
square brackets. I know that I can set up a rul in Outlook to run a script
when the e-mai is received but how would I write it so that it connects to
the Access database and access then imports the information into the correct
forms and fields?
Any information that any one can provide would be appreciated.
