How to freeze, enter data into, save, and email a table

Greetings:
I created a table in WordXP Pro and find that, when I attempt to type data
in the table's fields, the table enlarges to accommodate the data. How can I
freeze and save this table so that I can open it daily, enter new data, email
that filled-in table each month and still have a template of the frozen
table's template to start anew each month?

Have you already cleared the option to "Automatically resize to fit
contents" (Table Options) and set a fixed cell height and width?
