How to get my email signature font when changing PLAIN TEXT to HTM

Any suggestions how to kill sticky Times New Roman as default body &
signature font?

Even though I've changed my signature font to Arial, it stubbornly comes up
in Times New Roman (Outlook default) when I change a new message from PLAIN
TEXT to HTML.

Settings: Word is _not_ my editor, plain text font is Courier New, HTML
Composing & Reply/forward fonts is Arial; Signature font is Arial (ignored &
apparently "lost" when first inserted as plain text).

- Works fine if I make default message type HTML. (NOTE: Not really an
option, most of my messages need to go out Plain Text, for some I switch to
HTML.)

- If I don't auto-insert a signature, I get the following, odd difference in
behavior:
- new message, switch to HTML, all new body text is Arial (correctly) and
I can manually insert text or a signature and get my preferred font
- repeat the above, but enter text in the body before switching to
HTML--it's Times New Roman after the conversion

Others have groused about this too, any suggestions greatly appreciated. :)
