How to get Outlook2003 signature to default to same colour & font as the email I'm writing?

Hi

In msOutlook 2003, when writing an HTML email, how can I get
the *signature* to default to being in the same format and colour
(preferably black, Courier New) as the HTML email copy that I'm
writing?

In fact how the heck can I get the HTML copy to always be in Courier
New?

It absolutely drives me nuts the way Outlook keeps changing font and
colour
and even size when you reply to an email.

- Any suggestions?
