How to hide and reveal text within a document with a click

Once upon a time I was able in past tools to hide and reveal text in the body
of a document by highlighting text under a header line, selecting some
function and that text would group with a +/- next to it. I can't find out
this feature in Word 2007. Example - instead of the header "Helpers" shown
with a list of names underneath like John and Sue, you would see: "+ Helpers"
and when you click on the + it will expand to show John and Sue and the plus
changes to a -. You can click on the - and it will roll back up, hiding John
and Sue and only showing again "+ Helpers". This would occur multiple times
within the body of the word document. Any ideas? I can't for the life of me
remember how I did that years ago.

That's what happens in Outline View.

If you format text as Hidden, it will appear when you click the Show
Non-Printing Characters button on the toolbar.

In Outline View, I am unable to get the program to recognize that I want one
paragraph or one specific bulleted list to roll up and hide under the header
throughout the document. I tries to outline everything in the entire
document and I do not want that. What steps would I take to specifically
make the text I want to hide and expose happen to only portions of the text?

If you haven't formatted using Styles you need to manually Promote/Demote
each portion of the content to create the various Levels you want to have.
In your example teh Heading [not "header"] needs to be promoted to Level 1 &
the list of names below it needs to be demoted to Level 2. If there are any
sub-items within the list of names they need to be demoted to Level 3, etc.
Otherwise all content is treated as Body Text.
