How to I restore using Time Machine

Version: 2008
Operating System: Mac OS X 10.5 (Leopard)
Processor: intel
Email Client: Exchange

I am using exchange and filing older files in the "On My Computer" section of my computer. I had a crash and lost data.

I have backups on time machine. Where is my personal data stored (the equivalent of my .pst file if I were using my PC)? What file can I bring over to restore those folders?
