How to make Commandbutton caption

I have created a commandbutton in Excel (on a Mac) and cannot figure out
how to change it's caption or delete it. On a PC I can right click to do
this but the Mac mouse has no right click.

Yes it does, it just happens to not necessarily involve a 'right' button.
Hold down the Control Key or the Command Key while you click the button.
You'll recognize the Edit Text command readily enough, but you might wan to
explore the Format Control... Item as well.

BTW- In most situations it is the Control Key + click _only_ to access
contextual menus, but in this case both Cmd & Ctrl keys work.

Yeah, and the first thing I did with my Mac (I've been using Macs since
late 1983) is go out and buy a two-button mouse. My current mouse of
choice is the thumb-operated Logitech Trackman Wheel - a mouse using a
trackball operated by the thumb. The two buttons and scroll wheel are
on the top. The best part about a trackball is that you don't need to
move your mouse all over your desktop, especially if you have one of
the larger monitors. Logitech mice/mouses are the best. I didn't even
need to load the drivers.
