How to make insert symbols in a drop down field?

When I insert the ampersand (&) symbols as part of a choice in my drop-down
field, it does not show up when chosen nor is it printed. How do I make it
show up and print? Also, when there is a drop-down field, is there a way to
be able to write a different name instead of only the choices listed on the
field?
