how to make Word 2007 write white on blue as in MS office 2000 ?

Hi I just got MS Office 2007 suite and was wondering how or where the option
to enable writing white on a blue background is. It used to be under
“preference†or “options†in MS Word 2000, now with the new layout I am
completely lost.
