The option in the Envelopes dialog was removed from Office 2007 for the
reason described here:

However, you can still insert a BarCode field through Insert > Quick Parts
Fields. There are two ways to use it:
- First insert a bookmark that covers the address on the envelope, or at
least the zip code. In the Field dialog, after selecting "BarCode" from the
list of field types, select the bookmark's name from the list in the middle
of the dialog.
- Instead of bookmarking the address, you can check the "Bar code is US zip
code" box and enter the zip code to the right of it, which embeds the zip
code directly in the field.
In either case, you can use 5-digit zip codes or 5+4 codes.
If you set up an envelope template as in
http://www.gmayor.com/changing_envelope_layout.htm you can include the
bookmark and the field as part of the template.
