how to reset 'last row'

Something that's been puzzling me since I started using Excel (currently
Office 2000) is the following:

Ctrl-End goes to the last cell (row/column) of a sheet. I use it a lot to
select the remainder of a sheet.
However, when I've deleted rows at the end or columns at the right, Ctrl-End
still selects the highest row/column that has ever been used in this sheet,
even if it's way beyond the point where the sheets ends now.
Apparently, Excel has an internal 'last row' ahd 'last column' value for
every sheet.
Is there any way to reset these values to where the sheet really ends?
