I need to save a file as a .cov file (fax coversheet). How can I convert a
..doc file to a .cov file? The save as options don't list the .cov format.

You cannot "convert" a Word document to a .cov file. What you can do
is:
- open the document in Word;
- select some or all of it and copy to the clipboard;
- open fxscover.exe (the only application that understands the .cov
format);
- paste and position the copied material; and
- save it as a .cov file.
