How to set the default setting for excel?

Does anyone have any suggestions on how to set the default setting for excel?
I would like following setting when I open Excel.
Default font: Arial
Default size: 10
Default aligh: center
Does anyone have any suggestions?

these are set in options.
2003....on the menu bar...
tools>options>general tab
2007.... Office button>excel options....not sure after that.
