How to stop Word from doing global format changes

I highlight a block of text, may format changes, Word does it for the entire
document, so I have to click the UNDO every time I do a format change.

For example: I highlight something I want to change the color of and BOLD
it. I change the color and the entire document is changed to that color, so I
click the UNDO. Then I click the BOLD, the entire doc is bolded, so I have to
click the UNDO again.
