How to tracking the incoming request.

Hello,

I have a generics mailbox in outlook for customers to submit their requests.
It is about 100 over request per day.
Question, may i know how to keep track of those requests , would it be
posible to have a marco to convert it into Excel spreadsheet. so that at the
end of the day or month we can know how many requests have been submitted by
customers via the generics box.
