How to use Entity Relationship "Category" shape?

Regarding the Visio Entity Relationship (US Units) template, I am a seasoned
database developer, but have never seen the following shapes used:

- Category
- Category-to-Child
- Parent-To-Category

Can someone provide a real-world example of some table structures that use a
Category?
