I was sent a document to edit, and the table of contents
was set up so the user could jump from that table to a
particular point in the document. How do I remove that
option from the document?

Alt+F9 to display the TOC field code and remove the \h switch. Alt+F9 to
toggle back and F9 to update. Page numbers will still be hyperlinked, but
the TOC entries themselves will not be.
