Is it possible to specify a sheet to go to when you have
one hyperlink going from one workbook to another?

You can specify a sheet and cell as an anchor. for instance, to go
to Sheet "Sheet 2", cell J1, add this anchor to the end of your
hyperlink:

#'Sheet 2'!J1
