I did a system restore and lost my Mail Profiles.

I had been instructed to change the member of Domain to Workgroup in order to
access a wireless network. This caused my user to disappear and we could not
get back on the domain so I performed the system restore as of the day
before. It corrected the Domain issue, but the desktop appears as if I had
just added a new user.

The biggest problem is I had Outlook set up with multiple Profiles and when
I open Mail in the Control Panel none of my Profiles are there. Can my
desktop be restored, it is still in Documents and Settings.

NO, you will have to redo the profiles and connect the corresponding ..pst files to each one.
