How do I change the font colour in a subject field when posting an email in
outlook?

you can't change it on the message, but you can change it in *your* message
list using autoformatting. See tools, organizer, using colors.

We have a customer who emails us and it shows up as a Red Subject even though
the email is not urgent and I have not created a rule for this customer so
that his emails appear red. Some of his emails are coloured red and some are
not, I'm pretty sure it is a function he's turning on and off. I thought I
came across a solution once in Outlook and now I cannot find it *sigh*
