I used signatures to quickly compose standard messages

In Office 2003, I used several signatures to quickly create standard messages,
now in Office 2007 beta, a signature replaces a previous one, which is not
convenient for me.

That is because you are using a feature in the wrong way to achieve
something else.
Insert-> Quick Parts is the correct option to build messages from text
blocks you've saved.

I use the signature method to build messages from blocks of text in
Outlook 2000. I don't see Quick Parts. Is it only in newer versions?
Is there another way for me to add blocks of text?

Use Word as the email editor and Word's Autotext feature.
