I want to change 'spellcheck' from English US to English UK, but .

My word from office 2003 is defaulted to ENGLISH US when I spellcheck, but
when I try and change it to ENGLISH UK it doen't change despite me choosing
the UK option on the dropdown menu

The spellchecker is "intelligent" and swaps from one language to another.
Have you made sure that the text you are checking has UK English applied?

You can highlight the text and go to tools > language > set language and
apply English UK to the selected text.

If this is happening on all your documents, you might want to add the
English UK language to your normal style in normal.dot.

But the default settings are influenced by the regional settings of Windows
so check that out first.
