In my Gantt view, why do my weeks show up as negative numbers, i.e, "Week -1,
Week -2, Week -3"

Go to the project menu, select project information, set the start date to
the start of the first task in your project.
Now most should be positive.

You could also double click on the timescale (the gray area where the weeks
are shown) and change it to show different date formats.
