In Outlook 2003 - How do I assign a task to an Outlook 2000 user

Behind the Times, but Trying to Keep Up

I work with a few people who use Outlook 2000, and I use Outlook 2003. When
I try to assign them a task, or send them a meeting invitation, they receive
a garbled text-only email, and can't accept, decline, or reassign. Can this
be overcome?
