If you defined a POP account then the option of leaving messages on the
server is available. Sounds like you instead created and Exchange
account in Outlook to connect to the Exchange server at work (which is
suprising because most companies don't permit outside access to their
mail server). They may have setup a POP connector to their Exchange
account and that is to what you connect; however, they still do not
usually allow outside access to their POP connector without going
through a VPN from your home to their corporate network.
If you didn't delete the e-mails (so they are in the Deleted Items
folder) or are using a view that hides them, you'll have to contact the
Exchange admin to ask them to restore your Exchange mailbox back to a
prior state using their backups. That could mean that you lose new
e-mails delivered after whatever date you ask them to restore your
Exchange mailbox.
