Incoming email changes the name in the nickname file. Outlook2003

If I start a new email and type in the person’s name in and send the email.
Then start another email and type the first letter of the person’s name in
the TO; field the auto complete pops up with the person’s name as it is in
the display as field from contacts.
This is all by design and good.
But if I receive an email from that person the email has the person’s name
displayed in the FROM; field as it is displayed in the contacts.
But now when I start a new email and type the first letter of the person’s
name, the auto complete pops up and the persons name is changed to the person
email address field from the contacts not the display as field that it was
set to.
Is there a way to tell the nickname file witch field to use or some setting
some place that I'm missing?

Use your arrow key to select the one you don't want to use and press delete.

Milly thank you for the post.
I understand on how to remove them using the delete key.
I would like to know how to stop it from changing them to start with.
This is some thing new that Outlook starting doing about the first of this
year.
I'm in a group of about 10 of us using Outlook all day each day and all of
the systems are doing this.
