incoming header data changes in outlook 2003

All incoming messages have the header data changed (including from, time
sent, subject). All the header data is from an old e-mail. I do not know how
to get the correct header data from being over-written?

You really have to clarify here what you mean. It is known that Exchange
Server alters certain email headers, but not "from an old e-mail".

Give some specific sample for us to understand what you mean.
