Incoming mail server (POP3) reverts to LOCAL HOST, why?

You most likely have a security program (e.g. antivirus) installed that can
scan e-mail as it is downloaded/sent. These programs work by changing the
server name to localhost. This way the security program acts a middle man
between your mail client and the mail server.
