Incoming/Outgoing Email

I'm having trouble w/an employee not working and emailing back and forth tremendously and someone told me that we can track inter-office email. Is this possible and if it is, how would I do it. We have a server that we work off of but I don't know if that makes a difference or not. Please let me know what I should do, because now she's deleting everything before I can prove it to her that I know for a fact she's doing it.

You need to provide a LOT more detail.

What mail server are you using? Is logging turned on? What version of your
specific mail program (insert your mail program here) are you using?
