For some reason, my new messages recently started to go into my "Unread
Mail". How do I change it so they go to my Inbox and stay there until I want
to move them?

Unread Mail is a "search folder" that shows all items that are unread, including those in the Inbox. In other words, there's nothing to change. Just switch to your Inbox if that's what you prefer to view.
