Inserting "Long" Date

How do I insert the "long" date, i.e. where the day is given and the month is
spelled out instead of the xx/xx/xx format?? I've added the date and time
command to the toolbar, but I have not found an option that lets me change it
from this setting.

The date and time formats used when inserting into OneNote are taken from
your "short date" and "time" preferences in Control Panel | Regional and
Language options. Changing them there will immediately change how they are
inserted in OneNote.

Right, but why does clicking the "date" button in One Note give me the short
date? I want it to display the long date.

Not sure about the reasons for this design decision. But I can confirm
that there are no additional formatting options available when you use
the built-in commands to insert date|time|both. Sorry :(
