Is there any way to insert text on top of a graphic in word? For instance if there is open space in a graphic and you want to put some text in, can it be done? Like layering or sending the graphic to the back, text to the front sort of thing?

Actually there are several ways to go about it -- it just depends on what
type of effect you actually want to attain.

If you want the image to appear behind the body text you can
Control/Right-Click the image then choose Arrange> Behind Text, which can
also be applied from the Wrapping group of the Formatting Palette.
[Note: If you do use this one it's a good idea to become familiar with the
Select Objects tool on the Drawing Toolbar... Otherwise you'll have a hard
time getting a hold on the graphic again :)]

Another option is to create a Text Box or other shape containing your text
and stack it on top of the other object -- which sounds more like what you
have in mind. It would also be a good idea to select both objects & apply
the Group command once you have them stacked the way you want them.

There's also the capability to Insert an image as a Watermark or place
images directly into the Header & Footer layer of the document in order to
have them appear behind the body text.

The following link should prove useful as should the links at the bottom of
that page. Specifically the ones entitled About the Draw Layer & About
Floating Graphics:

Thank you! Worked great. I was very adept at Pagemaker and haven't had the need to delve into the "new stuff" until recently. I really appreciate your timely help.

Glad to help ‹ as you've undoubtedly discovered, Word is an entirely
different arena than any DTP/page layout programs. Publishing Layout View is
a step I that direction, but it's still in its infancy & doesn't compete
with the likes of PM, InDesign or QuarkXPress.

If this is a legitimate attempt to get assistance submit a NEW message
stating all particulars in the space provided. Do Not reply to other
