I'm a recent MAC owner and am used to using a PC. There is an "INSERT" button that allows one to type over already written text without having to delete everything first. Where is this on the MAC?

There is nothing system-wide, but Word 2004 has such a button for the
nostalgic few. (It might be in a different spot on 2008)

With that polluting the bottom of your Word window, click on OVR to get
the overstrike behaviour you crave.
Like any snotty elitist Mac owner, I can't imagine why you would ever
want to use overstrike. Usually, starting to type when the text you
want to lose is selected is so much more efficient. There is less
fiddling about at the end. Once you get happy with all the keyboard
shortcuts for selecting text, in Word and on the Mac generally, you
will find yourself overstriking less and less. One day you will wake up
and realise you have become another snotty elitist Mac owner. <grin>

Yeah, but you & Elliott demand all the vertical real estate you can get.
Being of a younger generation you were spoiled by having cut your computer
eye teeth on13/15" monitors while Elliott is talented enough [not
suggesting you aren't ] to command the where-with-all to possess the
largest displays on the planet.
Whippersnapper! I'd been hacking code for 15 years before I became oneI, OTOH, spent so many hours riveted to the 128/512K Mac's 9" screen that
even my current MBP's 15.4" display challenges my peripheral vision...
Giving up that one itty-bitty line is no sacrifice whatsoever when compared
to the convenience of having functional info & controls situated there

today's money, but I haven't had much wherewithal ever since. OK I got
plenty of screen on my Pro (2*20") but I love this little 12"
Powerbook.
Before I chucked Office 2008 out I measured how much of the PB's
precious screen space was eaten with grayness and gratuitous eyecandy
that could not be preferenced away. I forget how many of the lonely 768
pixels were thrown away, I think it was 15 or 20%.
That and no recordable macros. 2008 went straight to Room 101
(You gotta have a 1984 joke when talkin' 128K Macs)
