Install of Project Server 2007 on Windows Server 2003 R2

Are you aware of any specific setting needed while installing PS 2007 on the
R2 version of Windows Server 2003 ?

Nope,
Just do the install as described in Technet and you will be fine.

Yes, you can install PS 2007 on Windows Server 2003 R2 version. But
please make sure, you run Windows Server 2003 SP1 to configure IIS
correctly. As Sander said, follow the instructions from technet to
install.
