I have downloaded an update for Office 2008. When I try to install the update I get an error message telling me to "turn off synch services." What the heck is this? And how do I go about turning off synch services?

I have never seen this error reported before when installing or updating.
You can get that error if you switch Identities in Entourage and try to
enable Sync Services in the new Identity.

When you install or update Office you are supposed to quit all running
applications. The easiest way to do this is log out/in with Shift key down
to disable all login items.

Did you download via the AutoUpdater. If yes, then launch the AutoUpdate
from the Help menu and when it shows up in the Dock, select to keep in Dock.
Then log out/in with shift key down. Now you can launch the AutoUpdater and
it will download the correct updater. You can remove it from the dock after
you update.

I made sure all applications were closed except Entourage. I went to Help in Entourage and opened the AutoUpdate. I then downloaded Office 2008 12.1.2. I closed the Entourage application. I attempted to install the update. Once again I got the error message "close application Microsoft Synch Services." I have no idea how to do this. The installation failed.

I then logged-out with the shift key down. I logged-in with the shift key down. Now I had no applications running except Finder. I did not have a Help menu in the dock to open. How am I supposed to open AutoUpdate to try again?

Maybe I have not made myself clear. There is no "Help menu" in the dock on my desktop. How can I open the AutoUpdater when I have all applications closed?

Well it's the help menu of any of the Office applications.
The idea is the following: you launch, lets say Word, then in the Help
menu launch the Auto Update.
If it finds something, quit Word and let the updater install the update.

When the AutoUpdate shows up in the Dock, select to "keep in Dock" while you
do the updates.
