Intercepting Emails

Basic question.
Is it possible to send an email on Outlook and for someone to intercept
it?
What's the best way to prevent it?

Sure it is. Email is not secure, by design. You can, however, use encryption to secure individual messages.

By far the easiest way someone could do that is if you are sending/receiving
email over an unsecured wireless network and you are not using SSL/TLS to
connect to your POP/SMTP servers. I would say absolutely the first step is
to turn on SSL/TLS in the account options (note that this is in the advanced
section and is not the same as Use Secure Password Authentication). Second,
make sure you NEVER check email on an unsecured over an insecure (wireless
or public) connection to the internet.

These steps are easy to follow and will [probably] protect you from all but
the most intent of attackers (someone targeting you).
