Invite contact.....also inform one.

Is it possible to invite a contact to a meeting using the Required: or
Optional: but then in the same message just inform someone there is a
meeting?

Not in the same message, no. But you can forward the
appointment to someone as a vCal/iCal item after you've
sent the meeting request.
