Is there a Visio shape reference sheet?

If you are asking about flow chart shapes, no, I don't think there is an
"explanation" within Visio. The shapes are presented for your use and
enjoyment. Typically, they are common to a variety of "charting" techniques.
However, if you Google for a particular chart style, e.g., flowcharts, there
is usually an example or/definition for symbol functionality. Check out this
site for flowchart symbol definitions:

Otherwise, as Paul indicates, you need to narrow the field a little.
