Is there a way to retrieve deleted emails from the Junk Email Folder after it
was emptied?

That would depend on the mail account type that you are using.
If it is Exchange, check Tools-> Recover Deleted Items to find out what is
kept by Exchange's retention policy.
If POP3, check on the server (in case you leave a copy there for x days).
