Just starting and cannot delete notebooks

I am just starting this, and started a couple of note books to learn the ropes (which I have not), but not I cannot get them to delete? Every time I open up Onenote, they are there. I use a surface book, and if I use the pen, my "test" notebook opens. I really want that gone. Also, how do I set which notebook default opens with the pen? I really appreciate any help you all can lend.
