Keep records of declined meetings

I am wanting to know if there is a way to keep a record of
a meeting that is declined without having to make a copy
of the meeting. When I get a meeting update, after opening
the update Outlook changes the meeting time before I
accept or decline, I do not have the opportunity to view
the original meeting time/date. When a meeting gets
updated, is there any way to retain a memo of what the
original meeting time/date was?
Any helpful suggestions will be appreciated...
