where is any way, like a keyboard shortcut, too enter a time/date stamp into
a word2007 dox?

Alt+Shift+D, but note that it inserts a DATE field, which will update with
other fields. If you want a static date/time, you will need to immediately
unlink the field (Ctrl+Shift+F9).
