In simple terms, what keys do I need to use to get to the end or the beginning of my document?

It depends to some extent on what type of keyboard you have. The standard
keyboard shortcuts for those operations on a full-sized keyboard are:

Command+Home to go to the start,
Command+End to go to the end

But you may need to include the [fn] key or some other modifier on laptops
or other 'condensed' keyboards.
