Whenever I paste text from any other application (Mail, Safari, etc)
into Word 2004 (version 11.2, run under 0S 10.4), it changes the
default language on my Normal template to Eng (US) even though my
Normal template is set up with Eng (UK). Is this a bug or is there
something I could do to fix it? Any ideas much appreciated.

Honestly, I don't believe your diagnosis. :)

If text pasted in carries along US English formatting and contaminates the
rest of that document, that's one thing. I believe that. That's very common.
You might try pasting Unformatted Text, or using the Paste Options clipboard
and selecting Match Destination Formatting (though I'm not entirely sure
either applies to language, haven't tested that specifically).

Alternatively, after the paste, select Clear Formatting from the style menu
on the toolbar before you type the rest of your text.

Alternatively, select the text you just pasted and use Tools | Language to
set it to UK English.

But are you seriously saying that if you paste text into a regular document
from a different app, then every new document you create after that uses US
English? If you paste from Safari/Mail/etc, then open up your Normal
template, put the cursor in it, and go to Tools | Language, suddenly it
reads US English? That would be the case if it is really changing your
default language.

If that is happening, *please* confirm, it would be very good to know. And
if it is happening, you should be able to stop it happening by checking Word
| Preferences | Save | prompt to save Normal template, and saying NO when
you get the "changes have been made to Normal, okay to save them?" dialog.

You might try Edit | Paste Special | Unformatted Text, or using the Paste

if it is really changing your default language.
