Last Resoirt - Uninstall SharePoint?

Once upon a time a very nice vendor came in and installed Project
Server and Sharepoint 2.0 on a server for us.

Then they spent all sorts of time and money doing custom project server
configuration for us.

The employees that helped the vendor set it up quit and I inherited the
project.

Here's our list of issues:

The ONLY administrator account was a local account:
server33\S_MSProject of which no one knew the password. To add
other administrators, we had to reset that local password.

Now we cannot connect to an external SQL server/database, which means
we cannot connect to the configuration database,

We cannot change the method of authentication because it will only use
the original method.

As a last resort we're looking to uninstall Sharepoint Services and
reinstall - can we do this without affecting ANYTHING in project server
(besides sharepoint sites - which we're not using).

If so, can we also install Sharepoint Portal Server also and, exclusive
of the project SP sites, have a pool for team sharepoint sites.
