I guess when I installed Office Mac, I mistyped my last name. So now,
when I choose "About ____" from the Apple Menu on any of the Office
softwares [Word, Powerpoint, etc], it shows up as "This product is
licensed to:" my mistyped name. How do I edit this so that my name is
spelled correctly?

Try this:

1) Quit ALL Office applications.

2) launch the Remove Office application in the Additional Tools Folder in
your Microsoft Office 2004 folder.

3) After you launch the application, Press the option key at the first
dialog window and the button changes its name to read "Remove License Info
Only."

That removes the licence key. I think it also wipes the user name.

Next time you start any Office application, it will prompt you for the
licence key and your name.
