Linked Tables w/ Exchange

I'm trying to figure out how to use a linked table in Access and pull
custom fields from my Outlook Inbox. I'm trying to pull data from
1000+ Outlook forms and put them into Access instead of manually
copying the data.

Access will only pull data from pre-determined fields and will not
allow me to add new fields to pull data from.

Any idea on how I can do this.
