linking meeting to contact -2007

In previous versions there was a contact field to link an appointment to
contacts.
it appears thte only way this can be done in 2007 is by adding an email
address.
This brings up two issues>

What it person has no email? - While you can save the appt/meeting when I go
to contact and press activities the meeting does not appear, thus I assume
the meeting is not linked to that specific contact.

What happens if I want to send a contact an meeting request/confirmation &
it is linked to other cotnacts who may not be attending meeting (ie person
who is power of attorney (poa) on an account, the poa needs to attend but
other person doesn't but I would like to link meeting to other client)

Tools->Options->Contact Options->Check the box to link contacts.
