Linking tasks does not change start dates.

When I link tasks to create dependencies I now find that start dates are not
being sequenced. Meaning, even though I created a dependency everything
starts on the same day. This just started happening today in MS Project. Is
there a setting to ensure that all tasks are defaulted to finish-to-start
when they are linked?

Check that you are in automatic calculation:
In Project : Tools / Options / Calculation / Automatic
Otherwise, press [F9] to run the calculation of the project
